Did not work out like that. Walked up to community vege patch to get herbs for roast duck dinner. Bottlebrush flowers on the way - rain started then

Roast duck following a Jamie Oliver recipe. Chopped rosemary, oregano, sage, lemon zest, grated ginger with salt and pepper rubbed in with a little oil. Butter was a mistake. Stuffed inside with a few orange segments, few sprigs of rosemary and half a dozen garlic cloves crunched a bit
Place directly on the rack at 200C over a drip tray. In that - a little oil or water to stop stuff burning, chopped carrot, quartered onion, another 8 cloves fo garlic, two stalks of celery in two inch pieces, a few more rosemary springs.
Cook one hour. Swap out the drip tray - skim off the fat - need 3 tablespoons for potatoes. Transfer all the solid ingredients to a pot - add some water or stock and some port. This time used red wine and ketjap manis. Reduce
Add 3 tablespoons of duck fat back to the drip tray and slot in par cooked potatoes - cook one whole hour. Jus will have reduced by then. Skim off dat and ready to serve
Serving suggestion: place the ducknon a board and offer tongs and a fork. Tear away
End product was fab.
Left over duck - red duck curry or duck pancakes with spring onions, cucumber and hoi sin sauce
